The biodiversity in the coffee regions of Mexico ensures a wide range of high-quality coffee varieties. Coffee from Mexico is produced in different regions such as Oaxaca, Veracruz and Chiapas. The largest production region is Veracruz.

The harvest takes place from November till March and most coffees are characterized by a mild or light body to sweet caramel-like flavors. Bijdendijk works together with several fincas in Mexico, including Finca Monte Azul. This coffee represents Sweet taste, Citric Acidity with caramel and pipetobacco hints.
